End of Summer Garden Gala Cooking Class

We’ve all experienced that overabundance of vegetables in our gardens at the end of the season. What do we do with that ten-pound zucchini hiding under overgrown leaves, or the tomatoes that seem to multiply overnight, or the peppers that have had enough sun and need to be picked?  Well, no more leaving giant squashes on your neighbors’ doorstep and running! Let’s create some fun recipes that can utilize all this homegrown goodness. 

Abbondanza Autunnale  

Feel free to bring whatever abundance of vegetables you may have from your garden.
We'll need eggplant, squash, carrots, tomatoes, basil and other garden herbs, and any kind of greens.


Antipasto:
Eggplant stuffed with Italian Sausage, and assortment of Fresh Garden herbs, roasted Tomatoes, and Fresh Mozzarella
served alongside a salad created from a final harvest of Garden Greens.
We'll be making Fresh Mozzarella!

Primo:
Whole Roasted Fresh Turkey served with a Yellow and Green Squash Ratatouille, and an Italian Mashed Potatoe Pie.
Hopefully we'll have time to make Fresh Italian Bread to complement the meal!

Dolce:
Italian Carrot Cake with a Basil and Mint Gelato.
